Lately our dinners have gotten a little mundane. They still taste good but it was time to spice up the routine. Over the weekend we went to Trader Joe’s because I was looking for gluten free tortillas. For the past couple of months Chris and I have purchased some gluten free products. Its hard to find them in regular stores. At the Kroger I get the gluten free rice.
I decided to make a modified version of Whole Food’s Veggie Wrap recipe. I used to meat, lol. Before I made the wraps I had to make the hummus hours before.
Hummus

- 1 15 oz can of chickpeas
- 1/2 cup of tahini (can be found in Publix or DeKalb’s Farmer’s Market)
- 1/4 cup of chopped yellow onion
- 3 cloves of garlic, chopped
- 2 tablespoons of lemon juice
- 2 teaspoons of Extra Virgin Olive Oil
- 2 teaspoons of ground cumin
- 1/8 teaspoon of ground red pepper
- 1/2 teaspoon of salt (optional)

I put it all in our blender because we don’t have a food processor. So I’m blending and I walk away to lower the volume on the T.V , I come back and there is smoke coming from the blender! If I had let it run longer then it would have probably caught on fire. Luckily it was able to properly blend the hummus! Mission saved! Look how good that looks! I usually garnish with parsley but I didn’t have any.

I worked out and finished as soon as Chris got home. I took a shower while he cooked the turkey meat. I have no idea what he used to season the meat but it was so good!

First I heated up the tortillas . I like them nice and warm. Then I spread half a tablespoon of hummus onto the tortilla. You can use whatever veggies you want for your wraps. I’m more than sure they will be tasty. I used spinach, avocado, tomato, shredded carrots and mushrooms. It was oh so good and very filling. I tried to actually fold the tortilla into a wrap but it didn’t work too well b/c it was way too full.

Not the gluten free tortillas that I was looking for bu they were still really good.

For dessert I had a fig cookie. It had been so long since I had one. We totally forgot to buy some skinny cow ice cream
Whole Foods has some dairy free ice cream that I want to try. That should be interesting.
